It's obviously not parmesan (wrong texture) and it's obviously not manchego (wrong color). It's an aged hard cheese made of cow's milk. The texture suggests it's a Gruyere type cheese. However, Swiss Gruyere usually has a much sharper edge and is very expensive in the US, so I would guess that it is Wisconsin Gruyere.
