That did happen, to an extent. The idea was never to conquer Poland, but after the fact, there were attempts to work with them. To think that this was really possible at the time though is to be supremely ignorant on the subject.

From the beginning of the German-Polish border conflict, to the very late stages of the war, Germany repeatedly attempted to make make peace. The allies refused any such attempts.
Germany and Hitler never had any interest in waging a war of dominance, especially not against European powers. In fact, every action taken speaks to the contrary, and everything we know about Hitler suggests that he had a great respect for the British in particular.

Either way, attacking the Soviet Union was the correct decision, based on available information. The Soviets had an enormous army of paratroopers and tanks that would do poorly in their own underdeveloped country, but were instead built to steamroll through a Europe of well-kept roads.
I know attacking the Soviets is considered the big mistake, but based on the facts that Germany had at the time, they could either sit and wait to be steamrolled by millions of paratroopers and tanks built for blitzkrieg along modern roads, or exploit an advantage to take out what essentially was a despotic jewish empire.

Without the unsolicited war guarantee issued by Britain to Poland, the German-Polish border conflict would've stopped at Germany forcing Poland - likely through peaceful means and threats of war - to give Germany access to Ostpreussen, a railroad connection to Danzig, and administration of Danzig.
In exchange, Germany offered to build Poland a full free-harbor in Danzig, over which they'd have full administration, and still receive all taxes collected in Danzig.
All Germany wanted to do was to safeguard the German people from the atrocities committed against the German people in the German regions now occupied by Poland, a country that didn't even exist less than 20 years ago at the time.
Hell, in the first two years after WW1, there were literally millions of Germans forced to leave lands and homes their families had worked for generations.
