So in our small little body that is Earth, we have "liquid" at the centre, in a sense, so if there were enough pressure like that being greater the size of Jupiter on its own, instead of it being gas like in Jupiters, it would evolve to plasma.

not really, jupiter is a tiny gas giant compared to the exoplanets we have discovered. it isn't anything close to a brown dwarf, which may have radii similar to jupiter but tend to have 50+ times the mass. in theory, you have to be at least 13 times the mass of jupiter to even perform fusion. but even then, a lot of brown dwarfs don't even manage to fuse deuterium.
