It deals with numerous bits of ocean around the world, but here's the bits relevant to Argentina:
At the plenary level, the Commission adopted, without a vote, two sets of recommendations, namely the recommendations in respect to the submission made by Argentina, and ... With regard to the recommendations in respect of the submission made by Argentina, it is recalled that, previously, the Commission had already decided that it was not in a position to consider and qualify those parts of the submission that were subject to dispute and those parts that were related to the continental shelf appurtenant to Antarctica (see CLCS/64, paras. 76 and 77 and CLCS/76 para. 57).
It's all about deciding where the continental shelf ends, in order to define rights to sea bed resources (e.g. oil). This is not the same thing as territorial seas. The UN commission noted that it had already said it wasn't going to even consider areas that were subject to dispute, nor anything related to Antarctica. However, Argentina has plenty of other continental shelf which is not near either of those areas.
Furthermore (but not in the story or press release), there is a deadline for submitting technical data for sea bed claims. I suspect that Argentina would need to submit such claims anyway even if they knew the UN wouldn't consider them, so that they would be on record within the deadline period for potential future use (not that they're likely to need them). Since they're still claiming the Falkland Islands, they can't very well not include those on their official charts, or else the UK would use that against them in future.
It should be noted that the Argentinian foreign ministry "tweet" referenced by the Guardian mentions nothing about the Falklands.

The most organic way to start (and the best way in my opinion, as this is how I did it), is to first just go on the Wikipedia article for the war and its leaders and then google the topics that interest you and require explanation like the Exocet usage, the old dreadnought that should have been modernized, the failure of the Air Force and your fleet in being, and generally anything that interests you.
The book "victory: the Reagan administrations secret strategy" is a good one to read that gives you a ton of info on late 80's Cold War era politics but in an americentric view. That should get you started for even more topics to research.
"Logistics of the Falklands war" is a good one but for real critique of the Argentinian failure, it's better to simply research it online. Some of the books on the Argentinian perspective are shit and opinionated, but so are most books about the war.
And of course it's good to go from that to other military failures like Singapore, early world war 2 Anglo failures, the German failures on the eastern front allowing the destruction of an army at Stalingrad, and especially the concepts of fleet in being, especially in regard to Germany in both world wars as it mirrors the argentine situation during the Falklands, especially the division of power and the failure to properly use their surface fleet in any responsible manner.

Galtieri's failure to do so is stereotypical of junta commander in Chiefs. You have to take risks to defend against a comparative military power, especially one who's on the path to reprisal nearly alone against you so far away from their home.
The British took the risks and were rewarded with a resounding victory. The junta and Galtieri took none of the risks, negated every advantage and chance of victory they had at the start, and suffered a crushing and embarrassing defeat.
