If they pull out the "Racism = Privilege + Power" you can't get through with them. Just argue the point.
Racism, the hatred of a person based solely on their race, can be perpetrated by anyone, and to say otherwise promotes inequality between races.
If you want a different angle, try shift the races / locations, can a poor person in Africa not be belittled because of his race by rich Black africans? Or can Blacks be Racist towards Chinese people? Racism isn't solely a white/black dichotomy, anyone can be racist to anyone, it's abhorrent, but to say one race cannot be racist to another is the most condescending attitude you can possibly have. Calling them condescending of black people is a good way to go too.
Ask them to present a scenario, 1:1 swap the races and ask if it suddenly is/is not racist, if they say yes then say their answer treats blacks as different than whites, thus they are racist.

Is it just hatred though? Seems like having any feeling or belief about someone because of their race would be racist. Like how it's racist to fetishize Asian women. You're not hating them, but you are basing how you feel about them on their race.
I had a female friend who tried to argue that fetishizing Asian women is racist but fetishizing black men is not. We had a conversation about it and she actually came around, and she was one of those "racism=prejudice+power blah blah" people before that too. There is hope OP, just make sure not to say anything that could actually be racist and sound really sympathetic to minorities and you might actually convince a few people.
Also explain that there is already a term for the prejudice+power definition and that's called institutional racism. Also, white people can be victims of institutional racism, it's just extremely unlikely in the US because most of the institutions are owned by white people.
Also, it seems like members of the same race could be racist towards each other under the real definition of racism.
