Because animals have been our food source since the dawn of time. Domesticated animals exist only on the whim of humans. If they no longer served a purpose as companions, work animals or products such as meat and leather than they would never be bred in the first place.
Even a child has more intelligence than an animal. Also, children can be caused physically harm and they can be left mentally fucked up thanks to sexual abuse. When you slaughter an animal it's not going to be living with the memory of its death. It's dead. Plenty of guys have been kicked while trying to fuck horses because animals are very nervous about people being behind them. Also the only reason domestic animals put up with humans fucking them is because they've been bred to live close to humans for hundreds of years. This discussion is more about consent, and animals not giving consent for the actions humans take upon them. Horses that fit your criteria of being nervous are likely to kick someone behind them with or without the fucking part. Regardless of which situation actually occurs you've stated yourself that if the animal doesn't want something done to it, it will lash out. This act of self-preservation could be considered non-consent for being too close to the animal. It's therefore true that the opposite case exists where the animal can now consent to the touch.
There does exists a problem with the OP combining sex and death. Death is purely negative for the animal, where sex may/may not have any negative impacts to the life of animal. Pretty much making the two cases incomparable. Unless we assume animals just want to die.
