That's because most of the 'mixing' happened early, before other sorts of europeans made it over.
The whole concept of black and white races was invented in order to enslave the offspring of freemen and slave women, by the way, who under the ancient principles of british common law were born free. The fiction had to be invented that the africans were of an entirely different race, and thus that the mating was 'miscegenation' in order to bamboozle judges into declaring american born freemen as slaves, and also nearly simultaneously the same fiction was used also to extend the lawful period of time a person could be enslaved under common law (generally no more than 10 years) to an eternity, for black slaves only. Not coincidental, importation of white slaves from Ireland decreased drastically after this decision, while importation of black slaves from west Africa increased drastically as well.
This is Americas original sin. We were not the first, the last, or the biggest slave holders. But we did invent the legal fiction by which freeborn men with black skin came to be kept as slaves for centuries.
