Poland and Czech Republic are as safe as ever. Latest terrorist attack in Poland was done by fucking Nazi spies on 28th Aug 1939.
That being said, there are some concerns regarding World Youth Day (Catholic youth gathering with up to 1 million participants - prime target for terrorists) in Kraków/Cracow at end of July - even putting possible terrorism aside, city itself will probably get jammed with crowd, so I'd stay away anyway.
