Your AC CAN make you sick, no doubt it about it. A stock air handler makes for a perfect breeding ground for mold and other biological growth which can be quite harmful, and it's not exactly surprising. Your evap coil is filled with super cooled refrigerant and as the hot air from your house passes through it you get excessive condensation, basically it's a cold, dark, damp box supplied with plenty of food (from your hair and skin). On the flip side of that without an AC to removed that moisture your house will be very humid and mold can begin developing throughout your entire home in weeks. So yes, an AC system can make you sick but way less so than not having one.

In germany we do shock-ventilating. Most german houses if they're not old as fuck have good isolation. So if you shock-ventilate your home frequently you don't risk heating up the place in the summer as well as lose too much heat in the winter.
