You'll probably be hard pressed to find actual info on here, nearly every Irish kid is forced to learn Gailge in school and most grow to despise it and forget it as soon as the final exam is done.
Best answer is come to Ireland, visit a Gealtacht area on the west coast. There are Breach and Fior gaeltacht areas, Breach (iirc) is where less than 40% speak irish on a daily basis, which Fior being where more speak it. They are usually really open to visitors and know most are there to try and learn so will attempt to accommodate you, the best way to learn a language is to see it in use.

You just missed Seachtain na Gaeilge which is Irish week dedicated to learning the language. They have a website you can visit.
Also you could buy an Irish/English dictionay and try and get your hands on the Leaving certificate books on Ebay or somewhere. Leaving Cert is like a high school diploma or something.
Best thing is to go to the actual Gealtacht areas of Ireland and stay with the familes which a lot of people do. This can be expensive for people outside of Ireland.
Listen to RTÉ Raidió na Gaeltachta to hear the language being spoken. Website would probably broadcast in America.

Try Duolingo. It's not the most in-depth course, but its good if you're starting completely from scratch since you don't have to invest anything in it (it's online and it's free). Plus the daily targets it gives you is actually quite a good way of maintaining commitment. I haven't tried the Irish course, though, so I don't know what the quality is like for that specifically.
