You are right that America is less white than ever, but it's still at least 59-60%. It's mixed in some places, and still heavily segregated in others.
There are large swaths of America that are still overwhelmingly (like 90%+ white, and these areas are much larger and more populous than Denmark.

At present I'm in PA, which has plenty of very white backwoods kind of spots that get fun cold without being Canada cold. Where I grew up is already much more culturally-enriched.
This is a really big country with a lot of different kinds of people and places, so I can't tell you which cold, white place would suit you best because I haven't lived in enough different places. If you can bankroll it, come take a week and do a road trip across the northern part of the country to get a feel for how it changes. You could maybe middle it out planning to take I-80 across, but then switch to I-70 or I-90 to adjust latitude more South or More North, or hit other routes if there are particular places you'd be interested to check out.
