The theory of evolution is based around the phenomenon of genetic mutations that cause animals to change over time and the process of natural selection.

People tend to romanticize evolution. We don't automatically "grow arms and shieeett". Imagine a million humans right now, and of those million humans, there was someone who had a better resistance to the cold, maybe he had thicker skin or maybe he had more hair on his body. If an iceage happens, theres a chance that he will survive; in fact, the more harry someone is, the more likely they are to survive; there might be a case, however, where someone with hair dies first, probably being killed randomly from slipping on a banana, in which case the population will keep growing as it is, and someone with more hair will immediately have a better chance of surviving. And when that person survives and carries on his genes, then he might have one child or 4 children; we don't know, but the fact is that he and his children will be more likely to survive the cold than his non-hairy bretheren. And no matter how long it takes, as long as theres an environmental favoribility among harry people, it will cause them to go from a minority status to a majority status; and when they become the majority, it's only a matter of time before the even more harry human is born and the process starts again, until the population is all-around covered in enough hair to benefit their survival.

Well, because natural selection is something that is observable.
Every once in a while, a genetic mutation gives something's offspring a new trait. Some of these are beneficial, and some of these are not. If a trait is beneficial, then that offspring has a greater chance of passing on its genes to the next generation than one without the mutation.
Compound that effect for millions of years.
I don't ordinarily like Black Science Man, but one of the episodes of The Cosmos reboot that he did has the best (and least arguable) explanation of evolution I've ever heard. I just wish he wasn't so smug about it.
