I'm an atheist, studying Religion in Later Roman Empire. Orthodoxy seems closest to the Early Christianity and also the one which stayed most loyal to the tradition. An orthodox from 21st century can go back to the time of John Chrysostom and can feel pretty comfortable (with minor alienation). I cannot comfortably say it same for the others. An orthodox Christian can explain it better than me. It's just my humble opinion.

I don't believe that. I'll not bother debating it with Christians but certain traditions did change and certain traditions were added to Christianity. Orthodoxy is the closest if not the %100 imitation of the early Church. If you are curious about the subject read about the iconodoulos after the Iconoclast controversy. Scholars believe that veneration of Icons were far less obsessive and unimportant before Iconoclasts began to stir the pot, and after that heresy was over Church over emphasized on the Importance of Icons fare more than they did in the pre iconoclast era.
To going back to your Question I believe Pre Nicene Christianity is hard to trace compared to post Nicene and especial post Chalcedony Christianity. I think It would be safer to start around 4th to 5th century (Many cappadocian fathers lived during the nicene era anyways so it shouldnt be a problem) If you try to go back before that you'll have a hard time arguing tradition etc remained the same.
But then again I'm not a Christian nor a Believer nor I'm Bart Ehrman. So take whatever I said with a grain of salt. As I said before A believer can be very confident about the immutability of his Church.
