Because Catholics inherited all (most) of their rituals and bullshit when emperor Constantine converted to Christianity because it was cool to look good. Then he instituded all of his pagan customs into early Christianity. Christmas, Easter, etc and idolatry. Even most protestants are still to catholic for my liking. Irineus of Lyon, Ignatius of Anioch, Justine Martyr, They speak about the sacraments, the perpetual virginity of our holy Mother, things that modern protestants do not accept.

The Catholic Church decided on the biblical canon to bring some sanity into Christian literature, NOT so that they'll forget all they had been doing and follow some made up book.

The bible isn't just a book, it's more like a library with different genres of books. They each have a literal meaning, an allegorical meaning, and a spiritual meaning. If you don't have anyone teaching you then you're probably just going to take everything literally and ignore the other two. That's how you end up with creationists like Ken Ham that literally believe in a 6,000 year old Earth, and a creation period of 6 24 hour days.
Catechism, at least in the Orthodox Church, focuses on the Gospel and the sacraments, you're not give someone the same understanding of Christianity if you just give a bible to an inquirer and tell them to go nuts, and they end up spending all their time reading Deuteronomy and Isaiah.
