But I was just watching the first 20min of the debates and Trump mentioned him in the context of education, which is an interesting take on things. I don't know if that telegraphs a possible real sort of position or maybe just some sort of advisory role.

Balancing the ticket is incredibly important. Trump needs someone who has governing experience and is from outside the northeast. Minority status or being female helps.

Trump has already mentioned he wants someone with governing experience. This suggests a Republican politician. It's unlikely to be someone from the race. It's likely to be a governor and not a senator, because that helps him keep his Washington outsider status. A governor gives the pro of experience without the con of ties to DC establishment politics.

My guess for best choice would be Nikki Haley. But I doubt that would happen. Second best guess would be Susana Martinez.

Not really. There are established cabinet positions. It takes an official act of congress to establish new departments or cabinet positions. Such as when the Department of Homeland Security was established through the Homeland Security Act of 2002. These positions are paid and thus need to be approved by Congress, who is the only governing body that sets the budget.

Unofficial positions are simply referred to as "advisors" or "members of the advisory council". Or "Czars" when the media is having a slow day and wants to make an unofficial advisory role seem official and important.
