Wait staff at restaurants in the US often receive wages far below what we think of as minimum wage. A friend of mine who was a bartender at a semi-famous small venue in NYC once showed me her paycheck for 2 weeks, which was probably 4 nights actually tending bar from maybe 7pm till 4am and beyond. The check was quite literally for around $20.
I don't know how legal all this is, but from what I have understood hanging out with such people after close (mainly at shitty little restaurants), it's okay for the restaurant to give them ONLY their tips, because technically the restaurant owns the tips and in total they exceed minimum wage. What's worse is when any disparity with the checks and register come out of the total tips before they are split up.
So yeah, if you're tipping $3 for table service, you really are being kind of shitty to someone who probably works pretty hard.

The worst I've had in the past few years is a waitress more or less ignore a friend and I because we'd ordered dick-all and she figured she could make more money at other tables... which is legit.
Otherwise they generally open up with some banter, continue if we respond, shut up and serve if we don't, and keep our service in order.

Again, not true. I worked for a kitchen that knowingly served pubes in the catfish. Most of the staff were drugged-out felons. Now, the wait staff wasn't perfect. Most of them were high school kids who were lazy as fuck. But none of them would take an order out with a pube sticking out of it.
Kitchen manager was a certifiable nut job. And a total cunt. She knew what was going on in terms of shitty hygiene and did nothing for it. The servers cared about it because if something was wrong with the meal, the server got blamed.

I can't cook like a professional chef. I go to restaurants for the food, obviously. I'm in awe at anyone working in the kitchen of a restaurant - they do things that I could never do, dozens of times per night.
