You have to be careful with turkey because it's so large, it can easily dry out because it takes so long to cook.
Ironically, deep frying is one of the best ways to keep it moist. If you haven't deep fried a whole turkey, you're missing out. Inject some Cajun style butter and rub it with Cajun spice before you do.
