Because the govt will stop you. there are millions of acres of open land that homeless people could homestead on but the govt wont let anyone.
It's hard to do anything when your village is raided by domestic warlords with cia/mossad training. A lot of nations have very unfortunate geography, limited access to exports, etc. In a globalized economy if you can't participate you're just a giant farm for multinat corps

Farming requires you own fertile land, and the ability to keep animals away from that land is a big plus
And that primitive technology guy on youtube makes it seem easy, but building a hut is not something everybody can just do. Also, good luck making a mud brick lock on your mud brick door and keep your stuff safe.

Land away from urban areas is cheaper but not free and then the difficulty is finding a job. Though you could probably make enough off the internet easily enough if you have a good connection on the land.
