It's the same reason sappers are allowed to look like dirty lumberjacks, and highland regiments allow kilts for dress uniform. Historically the British had Sikh and Gurkha regiments with their own uniform dress code, and for the most part we basically inherited the British military organizational structure.
So we don't have Sikh specific regiments here, but we maintained Sikh specific uniforms, and rightfully so. These guys are born warriors; they fought to defend the Hindus from the Muslim hordes, they fought for the British Empire against all manner of barbarism, and they fight for the west today.
