The first time her reasoning was bad because 18 is no longer just in the ones place, it has a number in the tens place too. You can only stick all the numbers together if each "place" is in the single digits.
The second time her reasoning was bad because you subtract the overall smaller number from the overall bigger number, not each individual digit. Although for difference you actually take the absolute value of the numbers subtracted in either order, but the answer will be the same as absolute value if you start with the bigger number.
Neither of her issues actually seem like issues with reasoning actually, but rather misuses of operations. I never learned math this way, but it seems focused on doing operations rather than understanding why you use the operations. The problem is a lack of reasoning in the teaching method.
