The best way to cook a steak is to put it a 1cm or less above a well burning fire (I use charcoal mixed with oak and hickory chunks I have cut to the same size) for no more than 20 seconds per side. Then you put them to the cold side of the grill and arrange the vents so as to draw the smoke over them. Let them sit until they are Almost done enough to be considered rare, and serve them.
Slow cooking on low heat is the key to meats, but no one does it because it takes to long.
Also, I know I will catch flack over this, but I find its best to chill/freeze your meat so that its still cold on the inside when you transfer it to the cold side of the grill.

Beef is so expensive here in finland I might splurge on it twice a year. I can find shitty 8 oz beef steaks in 3 inches of pepper for a whopping 7 euros each. In general the affordable meat is chicken and pork with the package weight being 1/2 shitty paprika marinade.
