OP here. Whenever one attempts such a fold, it seems to mess up the top part also, which is supposed to stay the same.

What top part? The head doesn't look too complex, and you should be holding the wings and tail together so they don't flap all over the place.
Can you post a pic, labelled, of the "top" that's giving you trouble?
