don't do this, ever
it's in your right to take photos of people if they are visible from public places (laws vary from country to country but that's usually it) and if they tell you that you can't or you have to delete pics of them or they have to pay you they're just bullies
if you will use the pics for commercial purpose then you need them to sign a release paper, and if they don't you may either delete the pics or censor them so the subjects are unrecognizable, but they don't have a say on the matter

tell them what you're doing is legal and you will gladly call the cops if they have any doubt

Another good technique is to pretend you were shooting something behind them. Look past them, rather disgruntled by their presence, as you emerge from behind the viewfinder.

Nothing, just ignore them. If you think you can reason with the kind of people who threaten strangers on the street you are just asking for trouble. I don't understand why the rules change when you are taking pictures. If you look at someone and they start yelling at you and threaten to beat you up do you also have to explain to them why you were looking at them? If you are walking and you bump into someone and they threaten to beat you up do you have to explain why you were walking?

Worse than people who scream at strangers on the street are photographers who set a bad precedent for other photographers. See:

So someone confronts you and you proceed to act nice and cool while you explain to them what you're doing. So now that person and everyone around them expects every single photographer to do the exact same thing. Same goes for people who get mad and talk down to people who try to confront photographers. Even worse are the photographers who tell people they look beautiful/interesting and that they really wanted to take their picture. If you don't care about other photographers than that perfectly fine, do whatever gives you the outcome you want. Otherwise just stop making it worse for everyone else and keep walking. You are just setting a terrible example. Why waste your time with the less 1% of people who don't know how to behave just because you are taking pictures?

Worse case scenario have your camera handy to defend yourself. That is why I prefer metal film cameras. I'm looking into getting a nice tripod too.

I've had a number of people yell and threaten me so I feel a bit validated now.

Break my camera? Punch me? Poor your drink on me? Yeah, your effort of stopping me from legally taking a photo of you will definitely be worth the jail/court time.

I really can't begin to understand why people say these things with the level of consequence they could put themself in.

last week I was trying to take a photograph of Marina city (Chicago) while holding up a corn cob in the shot for comparison.

An angry security guard came by and told me I couldn't take photographs from where I was stood. He swiped the corn out of my hand and then picked it up and took it away with him.

I want my corn back.
