i got one of them little Victorinox dealies and i love it. I keep it in my babby-sized toolbox and it comes in handy all the time.
I think between your three knives you really got all you need ƒam. Big full tang chopping/batoning/killing bowie/bolo/kukri/sheddy bullshit knives are a meme and of no use to normal /out/ing.

I had a wenger version of your big victorinox I used as my camping knife for a few years.
For everyday-use I have an opinel knife. Folds nicely, is dirt cheap and easy to sharpen.

A knife that will not break on you. In a survival situation you may have to use your knife for something a normal knife is not intended for. It usually features a thick blade that is sharpened in a wide angle to keep it sharp as long as possible in heavy use. You should be able to fall small trees with it. The blade lenght is not so important for hacking stuff with a knife is very unneffecient way to work compared to batoning.
Many knives are marketed as survival knives, but most of them are not. Once you learn about knives you can just look at the knive and tell if it's good for survival use or not.
Often you hear "The best survival knife is the knife you have with you" is like saying the best car in the world is the car you own. Unlike the with other knives the best survival knife is not what "works" for you either.
It's okay to practice with a survival knife, but really it should always be a backup knife, not your primary knife. You can easily loose your primary knife and besides, why would you want to use a knife that sucks in every situation except survival one?

Well then you don't need a knife. However you're more likely to die above the treeline than below. You of all people should be prepared and worried about your survival. If I was you I wouldn't carry an SAK at all. The knife is useless against rocks and sand. A folding can opener weighs practically nothing.

I'm not sure? The largest opinel without a lock is about 2 3/8inch blade. Anything smaller has no lock.
The next largest, which has a lock, is about a 2 7/8 inch blade. Opinels larger than this have locks as well.
The lock collars can be easily removed if needed.
