If you dont care about weight then get a coleman sundome. Excellent tent, lots of ventilation, built like a tank. They come in a lot of different sizes. The 7'x7' should meet your needs.

I have the Gossamer 1 in dark olive, it's small, light, easy and robust. It also is truly water proof. I paid 120 euro shekels.
The Gossamer 2 is the same, but costs more, has only light colors available and has more space. If you can pay for it, get it, it's a proper tent.

Seconding the Sundome. It's great for car camping, not bad for backpacking if you split the load between 2 people. If you're gonna use it mostly for backpacking, I'd suggest getting the 3-person version, that way you got room to store all your gear inside comfortably. When I got mine last year it went on sale to around $60 k (thanks based Amazon), so just keep an eye on it OP.
