What is the best bait for rats? We have huge norway rats that are too big for normal traps but are too cunning for leg holds.

I used to have a pet rat. Peanut butter was pretty high up - especially good for traps because it doesn't dry out/go rancid, and it also whafts around so they can smell it far away.
BUT chocolate pudding was like crack to that little bitch. If you have a rat within 20 metres of your chocolate pudding-laden trap you have a dead rat

I tried this once and the fucking rat chewed through the bucket.
I ended up getting proper poison from a local farmer who lets me shoot rabbit on his land. It was industrial grade shit that comes in pellet form. I left a handful in a tray in the attic and the fucker gobbled it all up within a day. It hasn't been back since and that was just over a week ago.

I didn't fill it with anything because at the time I just assumed it was a mouse so wanted to catch and release. It was by pure chance after it escaped that I witnessed it climbing into the roof that I realised it was a rat and got a hold of the poison.

d-CON or Havoc if you can find them with the 2nd gen poison. Rats are becoming immune to the 1st gen Warfarin and the EPA banned all 2nd gen poisons.

Have you tried actual rat traps? I don't mean the regular mouse traps, they make giant spring traps for rats, and peanut butter is always a great go to bait.

I love #110 conibear traps for rats, they work much better than "standard" rat traps.
