I don't know if you've seen most of the roads in Iceland. Some of them are raised up with seemingly no shoulder. So you'd be walking on the road, and you'll get hit by a car bc they look narrow as well. There's a few videos on youtube about driving in Iceland, I'd suggest you look at those to get an idea of how the roads look.
Also, yes, you WILL die.
There is no such thing as bad weather, only bad clothing. This can be done but you would need to drop a few grand on professorial gear. Get into good shape, know your town stops and resupply points. I can think of 100 more fun things to do than this though.

Iceland is probably the sickest place I've ever been my whole life.
That being said, you'll die. I was there in August and the weather was already some of the fastest changing, scariest shit I've ever seen. There is literally nothing between some towns, and I was in the relatively heavily populated S/SW coast. People drive ultra heavy duty 4x4's out there in summer. Rescue personnel often use demilled APC's to rescue/recover bodies in winter.
So yeah, you'll die.

There is only the ring road open in winter, hiking there is not that special.
You can do highland trips in winter with snowshoes, best thing is that some huts are still warm thanks to geothermal energy. Also, you better have a shitton of expirience with winter hiking to pull this.
