The Type R was pretty much where the last NSX got really fast. (or at least fast enough to beat most of the competition) Honda said they were seriously considering a Type R version of the New NSX as well so it most likely will step on the toes of a lot of other super-cars.

The GT-R is well out of our price and maintenance range, and the Z is overpriced for what it is (an outdated, overweight Jap Mustang). Nissan used to offer more for the average man who might've walked away from the lot with a Silvia or 4-door Skyline instead of a Maxima.
The S-chassis needs to make a return and the Z needs to be split into two cars; the heavyweight GT car and the light S30 sports coupe from which it is descended.

Toyota made less and less sports cars over time but even in the 90s they were still selling the X-platform sports sedans and the 3S-GE Altezza RS200. We've had that for years. It's just gotten heavier and fatter with the same EJ25T at its heart. Also with the Evo gone and the Focus RS a limited run Subaru has no reason whatsoever to keep it competitive.

How variety has shrunk. Nobody denies that the existing ones are more powerful than their 90s counterparts but look at how few are still offered.

You're comparing how many are offered now to how many were offered during the bubble economy years and shortly after. The whole "golden era" of Japanese performance cars was artificially inflated. What we see now is fewer models being offered because of fuel efficiency measures brought about by the JP government with tax incentives for eco-cars.
Performance cars are literally only for those who a) don't care about the environment, and b) who have money to burn on cars in Japan. It's no wonder the Japanese manufacturers can offer cars like they do now at all. To me it's astounding.
