To what extent are coilovers a meme? Are they telly that much better than performance shocks and springs?

All the cheap ones <$1000 are basically stiff & poorly built trash
More expensive coilovers like kw/ohlins/bilstein do improve the performance/ride quality greatly, but its essentially the same thing as a spring & damper combo, just more adjustable + one product without requiring other parts to be put on
