No, FE and F8 DOHC come with the car sometimes. The car in that video, has a stock engine. About 20 different powertrain configurations came in the GD cars, from SOHC 8-valve to DOHC 16-valve, from 1.6L to 2.2L. Hope that helps.

Former 93' 626 owner. It was... decent I guess. For a practical car that will keep on driving forever it's great, but you already own a Mazda 3 so you're covered there. There wasn't anything particularly interesting about it.

Hey, you know how long it took Honda to make their first all-aluminum, semi-deep skirted engine like the Mazda K-series was in 1990? It took Honda until 2001 to copy it, and they couldn't even make a new engine code for it, they called it K-series too. So sad.
Honda hasn't replaced their 1996 J-block V6 either, it's such old architecture that I think it's the only V6 still using a timing belt, and it doesn't even have DOHC available.
