The first question you should ask yourself is what sort of platform are you after?
Weight goals?
Power goals?
Convertible, coupe, hatch, sedan?
USDM, EURO, JDM?
FWD, RWD, AWD?
Aftermarket support?
Once you figure out these answers, you'll be better off.

These are all of the classic "lighter, less power, good handling" variety like the Miata, and can be got for sort of cheap and have decent aftermarket support.
Or you could do a vette kart if you can weld, that'd be neat.
