E36 hands down but I haven't driven many nice cars in my life. Handles very nicely and the interior is comfy. Other comparable cars I've driven are A4 B5 which doesn't even come close, A3 8L which was pretty comfortable but didn't handle as well and 80 B3 which I think was even more comfortable than the E36 and was very quiet inside even at higher speeds but handled like a literal landbarge.
My current R53. Get it out onto winding country roads and it feels awesome.
Nothing has come close.

this. only needed a 150hp build and a locked 4.33 rear to go from a competent little basher to a backwoods barnstormer. light flickable and completely expendable. plus I can fit other motorized toys in the back, walked a 5.3 ram with 2 dirt bikes in the bed.

I worked at a luxury used car dealership transporting cars for a year, these were the best:

1996 Dodge Intrepd 3.5 24-valve
Its was BIG, the engine was highly responsive, and I got very good at cornering with it. Also very comfy road car with a yuge trunk.
Never shoul'dve gotten rid of it.
Most fun? A Rover Metro GTI. 1.4 litre 16 valve engine putting out about 100bhp. In a tiny car weighing less than 850kg.
The Metro replaced the Mini. So it's on that sort of scale. And I'm 6ft 6. So looked ridiculous driving it. But throwing that thing around country lanes in Northern Ireland was some of the most fun I've had in a car. You could redline it round the roads most of the time and throttle it to within an inch of it's life and it was good fun.
I've driven faster, larger and more powerful cars around the same roads and while entertaining, not nearly as "fun" because you're concentrating so much on keeping the car between the hedges. But in the Metro you could just go balls out in it all day.
Big horse power is great and all. But you really need a track or straight bit of road to unleash it all safely.
After the Metro I got myself a Pug 106 XSi, which was another little 1.4 low weight car and the fun was remarkably less, because it felt heavier and more sluggish as it's closer to 900kg. Amazing what 50kg or so will do.
