Gravel helps break in tires quicker, but then you're riding a sport bike on gravel so you might not want to do that.
I've always heard about 100 or 150 miles are needed to break in new tires. Keep in mind that if you're riding straight without many turns you're not going to be breaking in the sides of the tires at all.
