other than the original mini, what are some lightweight chassis being sold in the U.S. that can be a viable option and relatively easy to buy?

Nearly any kei car is a possible recipient of a busa engine. But they're not easy to buy in the USA.
Just think light and small and turbo busa.

What transmission do you plan on attaching to this bike engine? It's got to be strong enough to move you + 1000lbs of chassis quickly without breaking, as well as having the gears to properly use 12,000 rpm of input shaft speed.

That's the hard part.

MotoIQ put a Hayabusa engine in a miata, but they essentially had to design and build their own transmission and it was kinda a fail, which is sad considering all the money and time they put in.

Stop and think about why you want to do this too. Have you ever noticed that as vehicle weight increases, the rpm limit of a gas engine decreases? I know your thinking a motorcycle engine will be fast and revvy and powerful and whatnot, and you'll have sikk throttle response and internet creds, but in reality it's just going to be a high strung bike motor in something too heavy for its application. Just look at Formula SAE cars. They use bike motors and even they have trouble matching the engines wide rpm range to something that weighs less than 800lbs.

So in short, unless whatever chassis your planning you use weighs around the same as whatever bike you got the engine out of, there's really no point and your just going to be broke, both in wallet and vehicle.

Could you not keep the engine transmission together from the motorcycle and have the final drive be a chain as well on your kit car and play with your sprocket sizes to make it work?

It would be even better to use the motorcycle's engine and transmission then make a custom adapter to convert adapt the output from sprocket to driveshaft.
