Because it's too easy for the Ameriburgers food to fall into and clog it up.
1) stuff gets in there
2) slower shifting
3) more expensive
The manufacturer and you pay more to get a shifter that is more easily compromised and performs worse. The aesthetics aren't enough to cover the costs.
Also the demand really isn't there. Sticks are relegated to performance now-a-days and the boot feels better and is faster.

they look okay on old school exotics but that's about it, would look out of place on anything else.

I think that the anon thinks the gate somehow affects the operation of the shifter, in reality if it's properly adjusted it will work the same with the gate on or off, and if it isn't the gate can only hinder shifting for the most part. You can get really good shifting action from cable operated shifters, just have to maintain them.
