Tomorrow I am going to go buy a 2014 Dodge Challenger. However I intend to do some work to it within the first couple months of owning it.
One item I am going to change is the rims. It comes with these stock rims, ( ALY2441U20/2359B ) http://www.hubcaphaven.com/p/9833/aly2441u20-2359b-dodge-challenger-wheel-silver-painted-1gp23trmac.html
I intend to replace those with the Black Top Rims from the 2015-2016 Challengers, ( ALY2545U45 ) http://www.hubcaphaven.com/p/23082/aly2545U45-dodge-charger-challenger-wheel-black-painted.html
According to wheel-size.com the 2014 and 2015 seem to use the same sizing however they're might be a difference in tire sizing.

Now I know the tires that come with the car won't fit the bigger rims I want to replace them with but are there any other variables I am forgetting to look at?
Clearance. If your tire is bigger it might rub while you're turning or hit the top of the wheel well when you hit bumps. Since they say those rims are for challengers it shouldn't be a problem. Just so long as you aren't doing something nuts like sticking mudding tires on them or something.
So I should also find out what size tires those 2015 rims take and see if those would fit on the 2014.

Well the rim only determins the width and inside diameter of the tire, the height depends on the tire.
If you don't want to worry about it, get tires that are the same height as your old tires that will fit your new rims.
Buy a 2015 challenger senpai. The interior is much much better

That was my original plan. But all the 2015s I wanted have sold out and now I can only find 2016s which is the same as the 2015 but $5-10,000 more expensive simply because of the year.
I could pay a lot more and get an SXT Plus for $30,000ish
Or pay $20,000, do some work for about $2,500-$5000 and have just as good a car.
That $2,500-$5,000 would be for a much better stereo/deck, rims, some minor edits on the exterior, and some good quality seat covers.

I guess that depends on what you mean by better. For me some nice seating and a nice sound system is a good interior. I don't care for heated seats or any of that.

Me too, you can get good quality leather seat covers. Or if I really wanted to I could just take the seats out altogether but that would be a lot more work.

You can get full grain Bridge of Weir leather seat covers if you want but they'll still be seat covers. Honestly I've never seen seat covers that don't look trashy and ill-fitting.
