I'm not the greatest one to answer, but, since no one else has offered it:

Hydraulic steering has been around for a long time and uses hydraulic pressure to make steering easier. Electronic steering uses an electric motor to help you turn the steering rack and a computer to tell it how much.

There are advantages and disadvantages to both. Hydraulic steering lets you feel the road and tires better because the fluid will transfer the vibrations and jumping and whatever other motions the suspension and tires are feeling. Electronic steering doesn't give you that feedback, which makes you feel a lot more disconnected - and early systems were worse than they are now. The advantage of electronic steering is you aren't carrying around the hydraulic fluid and actuators which are heavier than the electronic assembly.

I've driven Porsches with both. The 991 is actually pretty good, they really did make it as good as it can be. The 997 before it really did have an extra edge in feeling the steering though, there is no doubt.

That's not how it works at all. Your steering, unless in a steer-by-wire system which most cars do not have, is always connected directly to the steering rack or steering gear box. The power assistance acts in concert with your effort to turn the wheels, it does not replace it.

Oh yeah, you got me there. I'd just heard that before. I assumed because the hydraulic system is fixed regardless of conditions and the electric is variable/programmed that there is some 'reverberation' for lack of a better word through the attached system. The electric adjusts to make things lighter while the hydraulic is fixed.

But I'm apparently wrong. I tried. No one else was chiming in and figured I'd be challenged as soon as I did, so, hopefully OP gets a good response in the end.
