If you want to recover any of that money after your inevitable total-loss accident, you should let them know.

No but don't underinsure your car. My grandpa has a 57 chevy cameo that was insured for only 12K which is like a quarter of the real value. One day he was sitting at a stop light like you do and he got rear ended by some roodypoo who wasn't paying attention. He got fucked by the insurance but the body shop guy was good to him and didn't charge that much over what the insurance paid. You will likely not get that lucky. Just get insured correctly. The damage might not look that bad but he had to sources NOS fiberglass panels, NOS tail light bezels, NOS bumper, and get it repainted.

Classic cars are strange when it comes to valuing the work you put into it, you can get special insurance that will give you an agreed upon value with the insurer, but if you have (or the person who crashed into has) good insurance you should be able to get the fair market value of your car if it's totaled. When my Nova was totaled they gave me $15k, even though that's way more than it was actually worth, largely because I swapped a 4 speed into it so they had to look at comparables with 4 speeds. The adjuster will search for similar cars to you in your area to find the price along with a list of market prices from something like Hagerty, you can send in your own examples in the negotiation before you agree on the price.
