Florida, so my little 4cyl is still like 70F when I start my car at 5am. By the time I drive out of my neighborhood and get up to 35mph on a main road, that 5w-20 is plenty warm.

Congrats, you warmed up the engine and nothing else... There is nothing wrong with letting your car idle for a minute or two before you drive. However, if you are going to do an aggressive drive you should probably do a few warm up laps where you drive at normal speeds to warm up other things besides the engine.

Whether it's my '79 351M, '87 Benz, or my dad's '02 Buick, I give it about 5 seconds before shifting into gear and taking off regardless of weather. The only exception is if it's too cold and I need the car to warm up so I can exist in there, or if it's too cold and the windshield fogs up.

My car starts up at like 1600 RPM and idles down to 1000. No idea why, but I always let it do the idle down thing before putting it in gear and driving off.

I also try not to rev it hard until the oil temperature is in the middle of the gauge thingy.

I don't really know what I'm doing but I assume this is gentle to my car.

The ecu is set to have the idle air control valve at a set position when cranking (probably has a coolant temp or air temp variable). The valve then ramps from the cranking position to the fast idle position, throttling the engine speed down as the valve closes.

It's for emissions and quicker warm-up. Additionally, due to the higher power required to pump cold oil, and the poor atomization of fuel when cold the higher idle helps keep the engine from stalling or having other running issues.

I don't get your argument, oil is thin when cold and thicker when hot. At low rpm thin oil Will lubricate fine, if you rev the engine more it won't be able to easily stay where it needs to nor will it take up tolerance spaces as well. When oil is hot it will stay where it is needed and take up tolerances spaces.

You can overheat oil just like coolant so it does have an operating temperature.

Oil pressure is also related to oil thickness, low oil pressure at idle is not worrisome, the 351 cleveland can have as low as 0 pounds of oil pressure at idle, it does this just fine because there isnt as great a need for oil. Its when you're revving high and you have low oil pressure you have problems. Its also a problem,to have too much oil pressure.

Not sure what point you're making here but that yahoo answers says that the thing about multigrade oils is they have a smaller difference in viscosity between hot and cold temps. They still get thinner when hot and thicker when cold, but less so than a single grade. Doing an oil change when your engine is hot and another when it's cold will show you this.
