i want to pursue a career in auto mechanics, is it helpful to have a log of shit you have done?

It's not exactly useful for your career, it doesn't work like a resume.
It is useful for when you want to sell your car, but you won't impress anybody with the maintenance log of your car when finding a job.
Have a small book in my glovebox where I'll note down everything I do, kilometres and whatnot

Full Service History means I file all the receipts away in a folder, in chronological order.
If I did it myself, there's no receipt, but I don't do anything more significant than an oil change.

As >>14139104 said, it's not useful for your career. Useful for you selling the car. It's also useful because it's just a good habit to be into. If you own a car long enough it can be rather easy to forget what all has been done to it and when, especially if you make any deviations from the scheduled service manual. Twice as much if you've bought a used car and are catching up it's maintenance.
Here's mine on my F-150, it's incomplete because the previous owner didn't keep very good records at all.

I stared doing something like that with my last car but stopped because of laziness.
I did it mainly to keep track of how much money I was spending on it rather than using it as a proof of maintenance.
