So why hydraulic brakes instead of mechanical ones?

What kind of mechanism do you propose? The only one I can think of that works with suspension is a cable (like many parking brakes), cables stretch, hydraulics can transmit a lot of force very consistently, and are easy to maintain.

very old cars have cable actuated brakes all round and were notorious for uneven braking
so often engine breaking was preferred
