Without actually owning a Mustang, because I need to cover up my faggotness.
Are the Lincoln Mark Coupes any good? Panthers are an option but I'm striving for 2 door.
If I find a Mercury Capri, should I dump for that? Over the other options?
Are there any fox platforms I should also look out for?
Basically any car with the 2.3 Turbo, 5.0, 4.6, and preferably late 80s and 2 door.
Autotragic won't honestly be an issue, I have Foxbody parts, and 3 tremec T-5s available for a a good price if I ever feel like it.
late 90s mark IX is good, look for an LSC model (the grill is body-colored) which i think had a tuned up mustang engine?
i've heard they fucking eat ignition coils alive though, like you have to change them once a year

See, I've been in those. I like those.
But I've owned a towncar from 99. And holy shit was that a terrible car. Climate control system was a complete pain to work on and kept failing me. Along with it handled had more electrical gremlins than the movie gremlins 2: electric boogaloo.
So I'm kind of opposing the Mark 8s. I do however want one, if I just knew it wouldn't have any of those problems.
I don't think that's likely though. Sadly.
Just go with a Mark VII or VIII, keep in mind they weigh a shit ton more than a mustang, are slower, break way more often, and cost more.
Or get a tudor panther. But their nothing like a Mustang in anyway.

the only big issues i've heard of are coils and the air ride suspension, but most mark 8s you will see on CL have had the air ride swapped for coils already which is an upgrade for sure
Get a Fairmont. Same chassis as a fox body mustang but looks like an average grocery getter.

The only good thing about fox body mustangs is how cheap and easier they are to make go fast in a straight line.
Add a bunch of weight and complexity to one, and you end up with the exact opposite.
I've owned a 89 Mark VII LSC, and a 87 TurboCoupe. Both were cool cars, but in the end I didn't really enjoy either.

I hear the 89s are really cool though when they've got a 4.10 in them and a tremec T5. But I don't want to be buying a car just to mod.

I still have the 85 tudor, but not sure what I'll do with it. Might sell it, or throw in a mild 302 and t5 since I have them laying around.

I did a full SEFI HO swap on my 85 tudor, along with a wide ratio AOD with a lentech valve body and 2400 stall, coupled with 3.55's and a trak-loc. It was just shit I had laying around, but it made for a fun DD. Coupled with PI swaybars all around, PI springs and KYB gas-a-just it didn't handle too terribly. Ran a 15.2, with bone stock junkyard e7's and stock crush bent duals.
