I have a 1.3 Multijet Punto. It has 200Nm but if I don't build up the revs a bit, it doesn't fucking move. And then the turbo spools and throws you against the seat.

Alfa stopped selling in America in ~95-96. Not enough market share to be worthwhile.

I drive TD since I have my licence.

And I find those engine awesome, they are like Dr Jekyll and Mr Hyde. When you are under 2500tr/min you can drive like a grandpa, your car is calm and peaceful. But when you reach 2500-3000tr/min, TD engines turn into berserker mode and kick your ass and you can drive like a Dead man.
Here some advices :
To overtake in commun situation (80-90km/h), just drive normally behind the car then downshift one gear (5 to 4 typically). You will reach the turbo using range and get all the power.
When you want accelerate like a Saturn V, reach 3500tr/min before upshift. Like that you will fall around 2500tr/min so still in the turbo range and you will not have the turbo lag.
Exhaust gas are very hot. Do not use your turbo when you engine is cold. Drive 3-4km around 2000tr/min before smash the floor.
Also for the sale reason, stop using your turbo 5-6km before your ending point or let your engine turn 2minutes before turn it off. It will avoid a brutal stop of cooling into a red hot turbo.

At 2500rpm the turbo is already spooling at 100% in most recent diesel cars.

Exactly. Turbo starts to "activate" around 2000-2500tr/min, when the exhaust gas flow is enough. So if you don't want to use it, drive under 2000.
And because it's a diesel, all your torque is around this rev, so you will not have any problem to move your big Italian.

The whole "torque down low" thing comes from when diesels didnt have turbos.
