It will definitely help you learning how to wrench on cars.
Small things like eyeballing a bolt size so you know what wrench/socket to get, identifying common components, getting used to tightening large parts with lots of bolts with the right pattern so they don't bend/warp/jam (like heads or valve covers for example), being familiar with the various kinds of gaskets or getting used to common tools is something you only learn with practice.
You probably won't learn much about how things work if you don't do some research yourself, but you will definitely start learning your way around tools, parts and bolts.
