This is a way better idea.

And it will get decent fuel economy if you tune it right.

I drive a 4500, and with all the shit on the back, it weighs over 12,000 lbs... can get 18mpg on the highway.

It's a fullsize cab/chassis without a rear bulkhead (which severely impedes roll over protection, and on that basis would not be legal). The only way that thing would be 2500lb is if it was literally just the chassis rails with an engine/gearbox bolted to it.

Also, van chassis is much harder to work on if it breaks.

Since the cab is over top of the engine mostly... don't ever buy van chassis unless you're building a maximum capacity cube van.

Correct. Almost no private users drive vans, and for commercial users every minute wrenching on something like a moron is a minute spent not making money when instead you could take it to the dealership and get a rental for free while yours is in the shop.

I would argue that minivans are worse to work on since they have a lot more cosmetic and soundproofing plastic in the engine bay, besides having the engine literally under the dashboard.

Just this morning I passed an Isuzu van with the box removed.

The damn thing was bouncing all over the road and the driver looked so miserable.

this. a fried of mine bought a Mitusishi fuso box truck and removed the box from it. every fucking bump in the road will throw you around in the cab.

keep in mind that these were sprung for very heavy loads. removing even the base weight (box/flatbed) will make the suspension very rigid.

Because cutaway vans are only sold in large quantities to commercial upfitters. You're not going to buy one just by itself as a private customer.

Any cutaway van sold is at minimum a 1-ton model. The heavy-duty frame alone weighs as much as many smaller trucks.

If this is the type of thing you want, better to buy a light-duty pickup and remove the bed.

I do and I have worked on a few vans in the past (doing some extensive jobs too, like replacing blown heads and whole engines) with no notable problems.
Vans are configured to be more accessible due to the fact that you have a small ass hood and most of the time the engine is under the windshield. Stop being scared of a small hood, those things are probably easier to take apart than most cars.
Minivans are worse than them.

I don't really see what would be so difficult to do once you remove the air filter and the plastic ducts attached to it, the engine is literally all exposed from above.
Air filter is easy to replace, oil is easy to pour in, the oil filter is probably under the engine like usual, only thing I don't see is the fuel filter, which might very well be under the air filter or somewhere under the vehicle. Is it a gas engine? Then the plugs are all there, perfectly accessible.

You can also see how the whole front end is probably bolted on as a whole, meaning you have full accessibility on the engine once you remove that, not many cars have a front end that comes off without taking it apart piece by piece.
You just see a small hood and go all "oh my God this is the least mechanic-friendly vehicle ever" without spending 5 seconds to look at how everything is placed accounting for the fact that you don't have a fully exposed engine bay.

Pic related is your typical Italian van, notice how, despite half the engine is hidden, everything is still accessible and easy to work on. The whole front end is held on by no more than 15 bolts and a bunch of plastic fasteners. Remove the coolant tank and BAM, all the engine is suddenly exposed.

Mitsubishi make 3.2 4 cylinder diesels.

Hino and Isuzu make 4.0 and 4.8 4 cylinder in their 2 ton trucks. Vehicles no longer than 15 feet in length. Shorter than a short bed single cab half ton.
