Why isn't there more grand baroque, operatic pop? Seems like it's only used ironically or parodically.

Not sure if it's what you're after, but for "baroque, operatic pop", try Scott Walker's first four albums. 'Scott 3' is my favourite.

i was obsessed with this album for about a year - and devoured his other stuff too. Looking back on it now, this album was the only really great record.
