Beethoven's Piano Sonata No. 8 would be my favorite although that's due to his control over key change in establishing an emotional center, rather than the form itself. I also really admire how Cage used his prepared piano technique to manipulate the harmonic structure of a piano sonata.

I don't listen to much symphonic music so my answer, Beethoven, is limited to analysis of his quartets and piano sonatas

I think you can see the beginnings of 80s rush as early as moving pictures, but yeah, they get very synth heavy. They become more alt rock influenced in the 90s (some good stuff there, I like stuff like dreamline and bravado from roll the bones). I also really enjoyed snakes and arrows.
