lets face it stereo is only really used for gimmicky shit

it has no real benefits other than amusing people who can't appreciate pure sound to begin with

I would say stereo, because it generates the natural way that multiple sound sources come from different directions, as well as the way an environment alters the reverbitation of sounds (although some artists could use mono for unique effects)

That being said, the previous anons are right with keeping originally mono recordings mono. Stereo remasters are more often than not shit.
