Boris and Zappa are both pretty varied. With Boris, I'd go for Amplifier Worship for a taste of their heaviest stuff and then Flood for the ambient/post-rock side.
With Zappa, Freak Out! and Apostrophe are great starting points for his comedy and experimental rock, and Hot Rats is a fantastic jazz album. Listen to The Grand Wazoo if you like Hot Rats.

Start with either of these three:
-Filth

-The Burning World

-My Father Will Guide Me Up the Rope to Heaven

Whichever one you like most, move chronologically. For Filth, end with Children of God. For Burning World, end with Soundtracks for the Blind. For My Father, end with To Be Kind. Once you're done doing that, go back and listen to the other stuff. Once you're done with the studio albums, feel free to listen to the live albums of the albums you liked the most.
