I first thought to post Rime of the Ancient Mariner, but I thought that might not have been mythological enough, since it's based on an English epic poem and not any type of religious/folkloric belief or story. Amon Amarth makes music pretty much exclusively either about Norse mythology or romantic depictions of vikings.
This song has some nice info about the concepts behind the song along with some cool fantasy art, but I think it's vital to understand the importance of dying in battle, since it was thought of as the only way to reach Asgard.

I don't claim to know anything about Taiwanese mythology, but given how many references to a "ghost king" I see in the lyrics, I'll bet on it. Similarly to Eluveitie, their music has to do with ethnic pride and subjugation, and features ethnic instruments (that thing that sounds like a female voice is actually a bowed instrument of some kind). This album at least, also has a version with the vocals in Taiwanese.

The only instrumental album I can think of. About the death of Baldrs (Norse). It's the album he made on a synthesizer in prison (I think he might have made another there as well). Not actually metal but by a metal musician. There's some link psychologically between liking melodic metal especially, and having an interest in mythology, I think.
